There’s nothing quite like a warm cup of chai on a cool morning or cozy afternoon. If you’re like me, you probably enjoy a chai that’s packed with bold spices, a hint of sweetness, and a smooth, creamy texture.
While this may not be the authentic version I am pretty please with this version of chai.
In this blog post, I’ll walk you through how I make my chai and you know what the best part is? You can customize it to your liking, whether you prefer it spicier or sweeter.

Ingredients for 2 servings
2 cups water
4 tbsp loose black tea (or 4-5 black tea bags)
1/4 cup coconut sugar
2 cinnamon sticks
7-8 cardamom pods (lightly crushed)
5 whole cloves
1-inch piece of fresh ginger (thinly sliced or grated)
2-3 star anise
1/2 tsp black peppercorns (for extra heat)
1 tsp ground nutmeg
1/2 tsp vanilla extract (optional for added depth)
Milk
For the Pumpkin Cream:
1/2 cup heavy cream
2 tbsp pumpkin puree or 1/2 of tsp pumpkin essence
1 tbsp maple syrup
1/4 tsp pumpkin pie spice
Preparation:
Start by toasting all your spices to bring out their rich aromas. In a small saucepan, add the cinnamon sticks, cardamom pods, cloves, star anise, black peppercorns, and ground nutmeg. Toast over medium heat for about 1-2 minutes, or until the spices become fragrant.
Add Water and simmer once the spices are toasted, pour in 2 cups of water. Bring the mixture to a boil, then reduce the heat and let it simmer for about 5 minutes to allow the spices to infuse the water with their flavors.
Add coconut sugar and tea after the water has absorbed the spice flavors, stir in the coconut sugar and black tea. Let it simmer for another 5 minutes, keeping a close eye on the tea to avoid over-steeping, as that can make it bitter.
**If you’re in the mood for hot chai(if not go straight to next step), pour in your milk of choice (whole milk or plant-based options like almond or oat milk work well). Bring the mixture back to a gentle boil, stirring occasionally to prevent the milk from burning. The milk adds a creamy, smooth texture that balances the boldness of the spices, Strain and serve.
Strain and Serve: Once your chai is ready, strain it into cups to remove the spices and tea leaves. OPTIONAL: If you prefer a stronger flavor, let it steep a little longer before straining.
In a small bowl, whisk together the ingredients for the pumpkin cream until the mixture becomes frothy and slightly thick, but not stiff.
In a cup filled with ice, pour the chilled chai concentrate about 1/3 full. Add milk, then pour over the pumpkin cream.
For an extra fall flavor boos sprinkle pumpkin spice on top

We're kick off day 2 of our Apple Week celebration, by sharing a delightful cocktail recipe that combines the rich flavors of apple cider with a homemade apple spice syrup ( it's giving major fall vibe). This Apple Cider Autumn Cocktail is the perfect blend of cozy and refreshing, making it a must-try for any fall gathering for your next cottage trip.
Ingredients:
2 oz bourbon or whiskey
1 oz freshly squeezed lemon juice
1 oz apple spice syrup (recipe below)
4 oz apple cider
Ice cubes
Slices of apple and cinnamon sticks for garnish
Step 1: Make the Apple Spice Syrup
1 cup apple cider
1/2 cup granulated sugar
1 cinnamon stick
1/4 teaspoon ground nutmeg
In a small saucepan, combine the apple cider, granulated sugar, cinnamon stick, and ground nutmeg.
Place the saucepan over medium heat and stir until the sugar has completely dissolved.
Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for about 10-15 minutes or until the syrup has thickened and reduced by half.

Pumpkin spice syrup
Ingredients:
1 cup of brown sugar
1 cup water
1/4 cup fresh pumpkin puree or canned pumpkin puree
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 teaspoon vanilla extract
Instructions:
In a medium-sized saucepan, combine all the ingredient Stir well to ensureeverything is well combine. Let simmer over medium heat for around 15 minutes. After simmering, remove the saucepan from the heat. Use a fine-mesh strainer to strain the syrup into a clean bowl or jar. Allow the strained syrup to cool to room temperature. Transfer the pumpkin spice syrup into a glass jar or airtight container. You can keep it in the refrigerator for up to 2-3 weeks.
Now for the frosty pumpkin spice espresso martini
Ingredients:
• 1 1/2 cups espresso ice cubes (brewed espresso, cooled and frozen into ice cubes)
• 1 oz coffee liqueur
• 1 oz pumpkin spice syrup
• 2 oz vodka
• 2 1/2 oz Bailey's
Instructions:
Prepare the espresso ice cubes by brewing espresso and letting it cool. Pour the cooled espresso into ice cube trays and freeze overnight.
In a blender, combine the espresso trays and freeze overnight.

* After simmering, remove the saucepan from the heat and let the syrup cool for a few minutes.
* With a fine-mesh sieve or a piece of cheesecloth, strain the syrup allow the syrup to cool completely before transfering it to a sterilized glass jar.
Mocktail
In a pitcher, combine the fresh watermelon juice, lime juiceand syrup. Add ice cubes and shake well. Pour the mocktail into a glass, filling it about two-thirds full.

Prepare the martini
add 2 ounces of lychee-infused vodka, 1 ounce of lychee syrup, and 1 ounce of freshly squeezed lime juice.

Peach Iced Tea
Ingredients:
• 2 cups of cold black tea
• 1 cup of fresh lemonade
• 1 cup of hot honey peach puree
• Peach and mint for garnish
Hot Honey Peach Puree:
. In a saucepan over medium heat, add 1/4 cup of honey, 4 peaches cut into small chunks, 1/4 cup brown sugar, 2 tsp of cinnamon, and 1/4 cup of water.
. In the large saucepan over medium heat, add all the ingredients for the peach puree and bring the mixture to a simmer, stirring occasionally.
. Reduce the heat to low and let the syrup simmer for about 15 minutes. This allows all the flavors to meld together and the syrup to thicken slightly.
. Remove from the saucepan and blend the mixture. Let the peach mixture cool completely before transferring it to a jar or bottle.
Instructions:
. In a large jug filled with ice, add the black tea and the lemonade.
. Then, add the hot honey peach puree and stir well.

Cut the honeydew melon in half and scoop out the seeds using a spoon. Reserve the half to use as a serving vessel.
Scoop out the flesh from the other half of the honeydew melon and place it in a blender.

Blend on high until the mixture is smooth and well combined.
Fill the honeydew shell with ice cubes, about halfway.

Yuzu, is a citrus fruit commonly used in Japanese cuisine. Unfortunately, I haven't been able to find yuzu in my area, so I decided to try and recreate its flavor using a combination of grapefruit, mandarin, and lime.
The result was a deliciously tart and citrusy mocktail I really like the paring here of the blackberry & yuzu the bubbles from the sparkling water brought out the flavours of and added a subtle effervescence to the drink.
Ingredients:
• 1 cup blackberries
• 1/4 cup yuzu juice*
• 2 oz of thyme syrup
• sparkling water
• Ice cubes
• Fresh thyme
• Blackberries, for garnish
*to repliante the flavour of the yuzu
You will need the juive of
1 grapefruit
2 mandarins
2 limes
Instructions:
1 In a glass muddled the blackberries with yuzu juice and thyme together until smooth.
2 In a cocktail shaker, combine the blackberry and yuzy mixture and simple syrup. Shake well to combine.
3 Fill a glass with ice cubes and strain the mocktail mixture over the ice top with starking water.
4 Garnish with fresh thyme and a few blackberries on top.

Passion fruit mezcal sour is a delicious cocktail that combines the smokiness of mezcal with the tropical flavor of passion fruit. It's a refreshing and unique drink that's perfect for any occasion.
Ingredients:
2 oz mezcal* can be substitue with tequila
1 oz passion fruit juice
1 oz lime juice
1 oz simple syrup
1 egg white
Ice
1 slice of passion fruit (for garnish)
Instructions:
In a cocktail shaker, combine the mezcal, passion fruit juice, lime juice, and simple syrup.
Add the egg white to the shaker and shake vigorously for about 30 seconds.
Add a handful of ice to the shaker and shake again for another 30 seconds.
Strain the cocktail into a glass filled with ice.
Garnish with a slice of passion fruit.

Tips:
To make simple syrup, combine equal parts sugar and water in a saucepan and heat over medium-high heat until the sugar dissolves. Let cool before using.
You can also use canned or frozen passion fruit juice if fresh passion fruit is not available BUT nothing beats freshly made juice.
For a smokier flavor, you can use a mezcal that has been aged in oak barrels and if you don't like the smokinest of the mezcal please use tequila.
This delicious drink is both refreshing and sophisticated, with a beautiful pink hue. And for those who prefer a non-alcoholic option, we've also included a mocktail version of the recipe.
Ingredients for Cocktail:
• 1 cup brewed hibiscus tea, chilled
• 2 oz gin
• 1/2 cup coconut water
• 1/4 cup hibiscus thyme syrup (recipe below)

Ingredients for Hibiscus Thyme Syrup:
• 1/2 cup granulated sugar
• 1/2 cup water
